Easy Oatmeal Bread

Happy Monday Morning!

This weekend I tried at my hand at this Easy Oatmeal Bread Recipe.

1 c warm water
1 Tbsp yeast
2 Tbsp sugar or honey
3 c flour (1 c wheat, 2 c unbleached white flour)
1 c oatmeal ( quick or old fashioned)
1/2 tsp salt
1/2 c melted butter (1 stick)
extra flour for kneading

Dissolve sugar or honey in water and stir in yeast. Set aside for 10 minutes until foamy. While you are waiting for the yeast to foam, mix up the dry ingredients and melt the butter.

Add melted butter and yeast to the dry ingredients and mix by hand. I mixed the ingredients together in a bowl with a spoon and then kneaded the bread on the table with some extra flour.

Shape the bread into a round loaf and set it aside to let it rise and double in size.

Set the timer on the stove for 30 minutes, then preheat the oven to 375 degrees. Set the timer again for 15 minutes. (TOTAL rise time 45 minutes)

Slash the dough with an X and put it in the oven for 40-45 minutes. ENJOY!

What a beautiful looking loaf of bread! I love the pumpkin variation you offered later too...now that the weekend is almost here again, I'm itching to bake some bread.
